Chinese Recipe : Steamed Fish head with Sour Bamboo Shoots

 Fish Head 1 piece (about 900 g)
 Sour Bamboo Shoots 100 g
 Ginger (cut into fine long strips) : 1 slice
 Sugar 1/2 tsp
 Spring Onion Seasoning (chopped) : 1 sprig
 Coriander (with roots cut off, chopped) :  1 sprig
  
 Seasonings: 
 Light Soy Sauce 1.5 tbsp
 Oil 1.5 tbsp
 Salt 1/2 tsp
